Our Roastery

Tucked into an old cow barn just off Hadrian’s Wall, you’ll find our roastery. We roast on a fully electric 12kg Probat P12 - a precision, production-grade machine built for consistent small batch quality. Its robust performance and exacting control keep us honest, helping us chase consistency, explore new profiles, and bring out the best in every coffee we roast.

How we roast with purpose

Aiming to embed the most sustainable practices  into the fabric of the roastery and our business, we’ve opted for 100% electric roasting and the use of renewable energy with solar panels to power our P12 and the roastery.  We roast in small batches to ensure each coffee is treated with the utmost attention to detail and allows us to consider each coffee and origin with care and precision.

Each batch is profiled, cupped, and tasted using our ROEST sample roaster until it reflects the characteristics of its unique origin and embodies the spirit of the Northumberland landscape that inspired it. We then scale our profiles to the P12 

SOURCING

We source and buy only speciality coffee from ethical and reputable UK speciality coffee importers. Our foremost supplier is Cofinet - a fourth-generation Colombian farming and exporting company with over 80 years of Heritage. With Colombia being our head roaster's (Amy’s)  favourite origin, Cofinet felt like the natural fit to be our primary importer. Their commitment to sustainable farming, long-term partnerships and transparency ensures our beans are fully traceable, exactly how a speciality roastery should operate. We also use other independent speciality coffee importers who can specialise in other particular regions of the world. These include Covoya, Mercanta and Condor coffee.
